The word tour is defined as a journey for pleasure in which several different places are visited. While we didn’t have to leave the kitchen to go on this particular tour, it was still a blast and most certainly a pleasure to sample this series of beers from Trinity Brewing.
Celebrating their 7th Anniversary this summer. Trinity Brewing decided to make not just one anniversary beer but seven versions of it. Taking their base beer, Mr. Saison, Trinity took on the task of making a yeast forward series of beers that is both tasty and provides a certain education of these brett strains. All seven of them were fermented on 100% brett and aged up to eight months in french oak chardonnay barrels. It is really something to appreciate and if you have some of these bottles, you are a lucky beer drinker.
Each beer has a different strain of brettanomyces or brett as most refer to it in the beer industry. For those not familiar with brett, it is a non spore forming yeast that is found on the skins of fruit and out in the wild. Once an off flavor that spoiled beer. It is now used around the world to impart certain, funky and sour flavors to the beers we drink today.
After our tasting we had a quick phone call with Trinity’s own, Jason Yester. He had much to say. Why they make so many saisons, what his favorites were and why they did the project.
Trinity is a saison driven brewery and Jason believes that yeast is the biggest flavor imparted into beer and the most over looked. Creating a series of seven beers allowed them to explore these flavors of brett and learn. Not only for themselves but also to give the consumers something to learn as well. Brett is an interesting things and not one brewer in the country has put them on display like this.
After the consumption of many sandwiches and sampling all seven beers. We had a nice list of tasting notes and a belly full of brett. Each one was different in its own way and it was neat to taste all the different notes of these yeasts.
